A good egg



EGGS are the ultimate fast food, speedy to prepare, packed with nutrients and more versatile than any other ingredient.

Whether you love baking, enjoy them sunny side up or are a master at omelettes, they're an essential kitchen staple.

While most fridges come with in-built egg racks, it's best to store eggs in their original packaging, which prevents them from absorbing other flavours through their porous shells.

Most experts agree that eggs should never be stored at room temperature, although cookery queen, Delia Smith, never complies. The reason? It's widely acknowledged that, for cooking purposes, eggs are better when used at room temperature and Delia's too busy to sit around for 30 minutes waiting for hers to warm up.

As most of us won't use up our eggs with such frequency it's best to stick to the fridge, but never in the door; the top shelf is coldest and, therefore, most suitable.
