ANYONE looking for something fresh for Christmas should visit the English Market in Cork and look for the stall called "On The Pigs Back". When it started 14 years ago, it offered something different to the traditional farmer's markets, in that it made its own pates and terrines, the quality of which are as high today as they ever have been (try a special seasonal venison terrine, for example).
With a selection of about 150 cheeses (some specially imported French varieties and some specially selected Irish farmhouse cheeses), as well as a wide variety of salamis and other meats, there is a truly mouth-watering selection at On The Pigs Back. But, for Christmas, it has some special foie gras and other confits, as well as baskets and hampers, which should keep the wolf from the door and a glow in the heart.
