A lot of people cook roast goose or duck at Christmas time, and if I were cooking one of those I would make a delicious sage and apple stuffing or a potato and apple stuffing with orange zest like we make at the cookery school .As an alternative to turkey, I would probably go for a really good piece of roast beef, like the rib or a sirloin of beef. I would order it well in advance, and I would ask for it to be really well-hung.

I love it when it has been hanging for three to four weeks, as it will be tender, tasty and wonderful. I would make a really good homemade bearnaise sauce or horseradish sauce.
