Hi Rachel
Can you please solve a family dispute – should you season meat before or after cooking?
I believe it makes the meat dry and always leave seasoning till the food is prepared, but my husband grinds salt and black pepper on everything before he puts it on the heat.
Thanks,
Samantha
Hello Samantha,
Well, you both have a point! If you season meat with salt in advance, the moisture will be drawn out, resulting in dry meat, so it's better not to do this. Mind you to enhance the natural flavour of meat before roasting or pan-frying it, some seasoning is necessary, so only season the meat just before it goes on to cook.
I hope this clears up the family dispute!
Rachel
