Use sirloin or strip loin for this delicious
stir-fry.

Ingredients
2 tbsp sunflower oil
250g beef steak, cut into very thin strips
1 small head of broccoli, cut into bite-size florets
1 medium onion, sliced
1 large clove of garlic, thinly sliced
2 tbsp oyster sauce
125ml water
Heat a wok slowly until smoking, turn the heat up to high and pour in 1 tablespoon of the oil. Add the beef. Stir-fry for two minutes until the beef changes colour, then tip onto a plate. Place the wok back on the high heat for a minute, before adding the broccoli with the remaining tablespoon of oil. Stir-fry for another two minutes, add the onion and stir-fry for a minute more. Then add the garlic and cook for another minute. Pour in the oyster sauce and the water. Bring to the boil and cook until reduced to a sticky sauce. Stir in the beef, along with any juices from the plate, and cook for another minute to heat up. Serve straight away, with rice or noodles.
