Dear Rachel
I often buy fish with my weekly shopping but am never too sure if I can freeze it or not so I'm not under too much pressure to use it that day. Does fresh fish freeze well? Also, I sometimes make a huge batch of fishcakes and wonder if I could freeze them instead of throwing half of them out? Looking forward to hearing your advice.

Dear Sam,
Yes, fish does freeze quite well. The fresher it is, the better it will freeze. It might be worth cutting it up into portions before freezing, and also make sure that there are no little pin bones left in the fish if it has been already filleted (fish that has not yet been filleted also freezes well, but should be gutted first). In answer to your question about freezing fish cakes, yes, they do freeze very well. With both pieces of fish and fish cakes, make sure to thaw them in the fridge, maybe overnight.
All the best,
Rachel
